The cool climates of our vineyards in Victoria’s Yarra Valley produce Chardonnay fruit of consistently high quality. At Domaine Chandon we capture these pristine varietal characters and ensure our wines express regional integrity, great style and elegant sophistication. Stylistically, Chardonnay fashion in the Yarra Valley has swung from ripe, oaky and rich to too lean and tightly wound. In recent years we have found a good balance between fruit expression and complexity derived from winemaking. Importantly, we are using less oak than ever before. The Domaine Chandon Yarra Valley Chardonnay 2015 is pale straw with green edges. Charming and generous stone fruit aromas mix with oatmeal and cinnamon characters. Harmonious with fresh lime, ripe melon and nectarine flavours balanced by zesty acidity and great length of flavour. Some flint and biscuit characters balance the finish.

Drawing from the diverse climes of the Yarra Valley, this wine is blended from the coolest sites of the Upper Yarra Valley, which are the last to ripen, as well as a large proportion from the moderate altitude vineyards near Woori Yallock and Yarra Junction. These vineyards are grown in granitic and red volcanic soils, which naturally balance leaf area and fruitfulness, giving us low yields with great intensity and flavour concentration.

The vineyards chosen for Domaine Chandon Chardonnay were carefully monitored by the winemakers throughout the ripening period to determine the exact timing of the harvest. The grapes were harvested when they were expressing vibrant and zesty Chardonnay flavours, as well as appropriate and moderate sugar content. Fermentation in French oak barrels using 100% wild yeast and a variety of fermentation temperatures has delivered a balance of fruit flavours and winemaking complexity. To permit the finest fruit expression, less than 18% new oak and no malolactic fermentation was used throughout the winemaking process.

Mild conditions in late winter and a favourable start to spring resulted in an early budburst for varieties such as Pinot Noir and Chardonnay. Late spring and early summer provided ideal conditions leading into veraison. Summer remained mild, with few days in excess of 35°C. This, combined with good canopy cover and cool nights, resulted in one of the best vintages for early varieties since 2002. Abundant flavour with some of the best acid balance we have seen shows amazing promise for the complexity and longevity of the 2015 wines. Winery Notes
